Any cover of a Dylan song is better than the original.
Two current faves: Great White's Tangled Up and Blue and Edie Brickell's A Hard Rain's A-Gonna Fall.
Also, anything Billy Shatner does (but definitely not Leonard Nimoy's Proud Mary).

MOR, how someone looks doesn't help me much when I'm driving around listening to the radio. That being said, you should go to youtube and check out the barefoot Ronstadt on the Johnny Cash show singing The Stone Ponies first hit(also a cover of a Mike Naismith tune).

Listening to Fall Out Boy's cover of "Beat it" right now. Tough to top the original, but this is a great cover.

I like the Wild Colonial's version of "It's Not Unusual".
The Wild Colonials with lead singer Angela McClosky certainly are in the "Best Bands No One Has Ever Heard Of" category. Hollywood loved them for soundtracks, but they never hit the big time. That category could create a whole new thread though.

Joe Cocker's The Letter beats the hell out of the original
Jimmy Buffet's version of Brown Eyed Girl
For the record Rod Stewart does not suck and the new version of Smooth Criminal is not better than MJ's. Period. :D
